Tasting Notes

The colour is garnet-red, very steady, deep and brilliant with purple lights. Open, expressive and complex with aromas of very ripe black fruits (elderberry, blackberry), some spicy scents (pepper, Garrigue). Palate great attack, tight but silky tannins. One notices a dominance of spicy scents, a lot of richness, a good length and a very ethereal final. Recommended food pairing is catalan-style saddle of lamb.

This now forms the basis of the M. CHAPOUTIER ethos and our team strives to reveal the very best of what the soils have to offer.

Vineyard & Vinification

Grenache grapes planting in gneiss soil and Syrah in calcareous clay. Grapes are hand-harvested. The extraction is only performed by punching of the cap during a long maceration which lasts at least 4 weeks. The wine from Grenache is aged in vats and the wine from Syrah is aged in demi-muids and finally assembled after 18 months.
